Ingredients:

For the pancakes:

  • 40 g of oats
  • 3 tbsp ricotta cheese
  • 1 egg + 2 whites
  • 1 tsp Vanilla
  • 2 tbsp almond flour
  • 1 tsp Baking Powder
  • 1 tsp cinnamon
  • 10 drops of stevia


For the ice cream:

  • 3 tbsp ricotta cheese
  • 1 tbsp light cream cheese
  • 1 / 2 cup frozen blueberries
  • sweetener to taste


Toppings:

  • Meringues Don't Worry!
  • Berry juice


Preparation: 

1.Mix the ice cream ingredients in the blender or processor and take it to the freezer where you prepare your pancakes.
2. Mix the ingredients of the pancakes and cook your pancakes. TIP: Use a 12 cm pan.
3. Form a tower of pancakes and place the ice cream on top, for toppings add meringues and berry juice and voila, it's a delight!
